Tegan's World Famous Mac n' Cheese

    Ok folks, you are amongst a priviledged few that actually are getting this recipe. Many have wanted the secret that makes the neighborhood kids congregate at my dinner table when I make this, it has even been know to reduce grown men into children (yeah, like that's hard,hehehe).

    2 tablespoons of butter
    2 tablespoons of flour
    1 teaspoon of dry mustard powder
    1 teaspoon of black pepper
    2 1/2 cups of milk
    1 lb Velveeta cheese (cubed)
    1/2 cup bread crumbs
    1 tablespoon of butter

    1) Preheat oven to 350 degree's
    2) Cook 1/2 box elbow macaroni as per box directions. Drain
    3) In medium saucepan, melt 2 tablespoons of butter over medium heat. Add flour, dry mustard & black pepper, stir to combine. Cook, stirring constantly for a few minutes. Slowly add milk. Continue to cook over medium, stirring constantly until mixture coats back of spoon. Remove from heat and add cheese. Allow to melt completely.
    4) In small saucepan, melt 1 tablespoon of butter, add bread crumbs, stir to coat.
    5) Pour cheese sauce into large casserole dish, add elbow macaroni and stir. Sprinkle bread crumbs over top.
    6) Bake 20-30 minutes until bubbly and top is light brown.
    Variation: add cocktail franks or sliced hot dogs

    Serves 6 as main course or 12 as a side.

    NOTE: You must use 1 lb of Velveeta, any other yellow cheese and it's just ordinary mac n' cheese. That's the secret.

    What is Velveeta cheese? I've not heard of that one.

    Velveeta is a processed cheese made by Kraft. You might not be able to get it over there, I remember my friend from Belgium saying she can't get it. But I would be very surprised if you couldn't get it online.

    I wonder if the processed cheese slices would work?

    They don't seem to melt as well, I think it's the higher fat content. The cheese slices seperate when heated.
