Turkey with Carrots, Broccoli and Sesame

    TURKEY WITH CARROTS, BROCCOLI AND SESAME

    3 tablespoons sesame seeds
    1 pound cooked turkey, sliced in strips
    2 tablespoons vegetable oil
    2 cloves garlic, minced
    1 tablespoon ginger, minced
    2 carrots, peeled and thinly sliced
    2 cups broccoli florets
    3 teaspoons cornstarch
    1 tablespoon water
    1/2 cup chicken stock
    2 tablespoons soy sauce
    2 tablespoons rice wine vinegar

    In non-stick skillet toast sesame seeds and set aside. Add garlic, ginger and carrots to skillet and saute.

    Add broccoli and continue cooking. In small bowl combine cornstarch and water. Pour in stock. Add soy sauce and vinegar. Pour mixture over vegetables.

    Add turkey. Cook until vegetables begin to softened. Serve over rice, topped with sesame seeds.

    Yield: 4 servings
