Soda Bread

    6 c. plain flour


    1 c. buttermilk
    1 tsp. bicarb of soda

    1 tsp. salt






    Mix all dry ingredients together in a bowl and make a well in the center. Add enough buttermilk to make a thick dough. Stir with wooden spoon; the pouring should be done in large quantities not spoonful by spoonful. The mixture should be slack but not wet and the mixing done lightly and quickly. Add a little more milk if it seems too stiff.



    With floured hands put onto a lightly floured board or table and flatten out dough into a circle about 1 1/2 inch thick. Put onto a baking sheet, and make a large cross over it with a floured knife. This is to ensure even distribution.
    Bake in a moderate oven 180 degrees) for about 40 minutes. Test the center with a skewer before removing from the oven. To keep the bread soft, it is wrapped up in a clean tea-towel. This quantity will make 1 large one or 2 small ones.

    Cant say ive ever tried this or seen it sold in asda, might give it a go and let you know what i think havin heard so much about it!!!

    What is buttermilk? :) Is normal butter?

    It is a more sour milk... if you can't get it in your area, you can make something similar with lemon juice or vinegar. The mix is one tablespoon vinegar or lemon juice to one cup milk. Then you let the mixture stand for about five minutes before using

    Also, plain yogurt can be a substitution in most recipes in a pinch... not sure with this recipe though.

    Also dry buttermilk can be purchased (keeps indefinitely and is more convenient.)
